A single-location operator doing 3,000 orders a month at a $35 average ticket gives away roughly $48,000 a year in commissions to the apps. A six-thousand-order operator gives away $120,000. A multi-brand ghost kitchen, $300,000 a year per location.
That money is the difference between hiring a second cook, opening a second location, or closing. Zayos exists so restaurants can take it back without dropping the marketplaces they depend on for discovery.
