What is actually on the screen?

A KDS is not a monitor showing a list. Six things make it a working tool, and if a demo is missing any of them you are looking at an expensive television.

  • Channel badge

    Where the order came from: your own site, DoorDash, Uber Eats, phone. The expediter needs it to know which bag and which handoff shelf.

  • Order type and promised time

    Pickup, delivery or dine-in, plus the time the diner or the driver was told. This is what the line sequences against, not the order it arrived in.

  • Items, modifiers and notes

    No onions, extra toum, allergy flags. Modifiers printed in a different weight than the item, because that is the line that gets missed at speed.

  • Station routing

    Grill items on the grill screen, cold items on the salad screen. One order splits across stations and reassembles at the pass.

  • The timer and its color

    Every ticket counts up. Color changes when it crosses your target. It is the only honest ticket-time measurement a kitchen has.

  • Bump and recall

    Bump clears a finished ticket. Recall brings back the one you just cleared by mistake, which paper cannot do at all.

What does it change on a Friday night?

Not the cooking. A KDS does not make a grill hotter. What it removes is everything around the cooking: walking to a printer, hunting for a ticket, asking the front which app the tall bag belongs to, and remaking an order because the paper slid behind the line.

Run the arithmetic on your own numbers rather than trusting a brochure. If your kitchen does 120 tickets on a Friday and the screen saves 15 seconds of walking and squinting per ticket, that is 30 minutes of line labor back in one shift. If it prevents two remakes at a $12 food cost plus a refunded ticket, that is real money in a business that runs on single-digit margins.

The second change is measurement. Paper tickets give you a feeling about how the night went. A KDS gives you the actual time on every ticket, by station, by channel, by hour. That is the number to argue with when somebody says delivery orders are slowing down the dining room.

What do owners get wrong about a KDS?

  • That it is a screen instead of paper

    The screen is the least interesting part. Routing, timing, recall and one unified feed are the reasons it earns its keep. A system that only displays is paper with a power cable.

  • That it needs special hardware

    Plenty of kitchens run a KDS on a commercial tablet mounted at the pass. What matters far more than the glass is what is feeding it, and whether every channel arrives in the same layout.

  • That it replaces the point of sale system

    It does not. Payments, checks, cash handling and sales reporting stay in the POS. The KDS is downstream of it. Any vendor blurring that line is selling you two products in one sentence.

  • That the staff will love it on day one

    They will not. Give it two weeks, keep a printer on the line as a fallback, and train the bump discipline before a Friday, not during one.

Not for volume alone. You need one when you are running more than one order channel, because that is when a cook starts switching between screens and formats. A single-channel counter operation with one printer is usually fine. A shop taking direct, DoorDash and Uber Eats orders is not.
Can a KDS show DoorDash and Uber Eats orders?
Yes, if something upstream is feeding them in. Marketplace orders reach the KDS through the point of sale system or through an order aggregator such as Otter. The KDS itself does not connect to the apps; it displays whatever the system in front of it hands over.
Does a kitchen display system work if the internet goes down?
Ask the vendor that question before you sign, in those words. Most modern systems are cloud-connected and behave differently in an outage: some cache tickets locally and catch up, some go dark. Whatever the answer is, keep one printer on the line as the backup plan.
