Land O Lakes is spread out. Zayos puts the delivery radius back in your hands.
Zayos is commission free online ordering on a Land O Lakes restaurant's own website. You set the delivery radius, the prep times and the schedule, instead of a marketplace sending a courier eight miles down State Road 54. Plans are $499 to $699 a month per location.
Free. About 60 seconds. No card.
Why do the delivery apps go wrong in a place built like this?
Land O Lakes is not a town with a center. It is unincorporated Pasco County, north of Tampa, laid out as large master planned communities hung off a few arterials: the SR 54 corridor, US 41, Collier Parkway, Ehren Cutoff, with the Suncoast Parkway down the west side. Bexley, Connerton, Ballantrae, Lake Padgett, Wilderness Lake and the newer developments each sit behind their own entrance, and the gaps between them are measured in miles, not blocks.
Hand that geography to a marketplace and the dispatcher will send a courier six, eight or nine miles with a handful of signals and a gate at the far end. The bag leaves your pass hot and arrives lukewarm forty minutes later. The customer does not review the app that assigned the run. They review your food.
In a spread out suburb the real cost of a marketplace is not only the commission, it is that somebody else decides how far your food travels.
What actually changes when you own the radius?
Three things, all operational rather than clever. You set how far you will go, so the run that was always going to arrive cold never gets accepted. You quote times honestly for a market where four miles can take eighteen minutes at five thirty on SR 54. And you choose the driver, your own or a dispatched one, so the person carrying your food answers to you.
The rest is arithmetic. Marketplace commission runs 15 to 30 percent as a base rate and 25 to 35 percent blended once delivery, in app marketing and card processing stack up. Run that against a plausible SR 54 kitchen.
- 650 marketplace orders a month at a $36 average ticket = $23,400 of app volume
- At a 28 percent blended cost = about $6,552 a month
- Roughly $78,600 a year, from one location
- Zayos Operator + Marketplace = $599 a month, $7,188 a year, flat
A model built from the order count and ticket size shown, not a customer result. Tickets run higher here than in most Florida suburbs because these are household orders, which is also why the percentage bites harder. The free AI report runs it on your real numbers.
My business is families and youth sports. How should the ordering be built?
Around scheduling and around big orders, because that is what this market buys. The households are young and busy, the calendar runs on practices, games, community events and school nights, and the food decision gets made hours before anybody is hungry. That is the opposite of the impulse ordering a marketplace app is designed around.
So the build leads with order ahead for a chosen time, pickup on the commute home for a parent already driving north off the Suncoast, and a catering flow for the team feed and the neighborhood event. On Zayos a catering order carries a 10 percent service fee that the diner pays, and the restaurant keeps 100 percent of the food revenue. A $260 team order through a marketplace at a 28 percent blended cost gives up about $72.80 before you have bought a single tray.
A scheduled family order placed at two in the afternoon is the most profitable ticket a suburban kitchen takes, and it is the one a marketplace charges the most to carry.
The other half is the list. Team parents, HOA organizers and the same twenty families ordering every other Friday are worth holding on to, and a marketplace will not hand you their contact details. On your own site they are your customers, and the catering playbook covers how to work that pattern.
New neighborhoods keep opening. Do I still need the marketplaces?
Yes, and this is one of the few Florida markets where we say that without hedging. A household that closed on a house in Bexley last month has no idea what is good on US 41, and the apps genuinely are a discovery tool for them. What is not defensible is paying that same percentage two years later on the family's fortieth order.
Operator + Marketplace at $599 a month exists for exactly this. Otter pulls every DoorDash, Uber Eats and Grubhub ticket onto the same kitchen tablet as your direct orders, so the line works one feed while you move repeat households over with receipts, reorder links and your own offers. Discovery stays on, the commission stops compounding, and the integrations page lists what connects.
What does it cost, and who is running it today?
Operator is $499 a month per location, Operator + Marketplace is $599, Concierge is $699 with up to five virtual brands out of one kitchen. Month to month, no setup fee, no commission on any tier. The only per order charge is the diner paid service fee: $0.99 pickup, $2.99 delivery, nothing on dine in, 10 percent on catering. The restaurant keeps 100 percent of food revenue and tips. Details on the pricing page.
Zayos is built by Zay Revenue Group, a Fort Lauderdale company. We do not have a customer in Pasco County or in Tampa and we are not going to imply otherwise. Naya Grill, in Pompano Beach and West Palm Beach, is the restaurant live and taking orders today, and it keeps $48k+/yr that used to leave as commission. Seven more storefronts are built and open ordering at their own launches. What we commit to for a Land O Lakes operator is the timeline: live in under 2 weeks for most, first direct order usually inside the first week. Read what Zayos is for the plain definition.
