Methodology
- Volume tiers set by aggregated Florida-independent restaurant order-volume distribution (FRLA + industry sources). 5 tiers span the realistic span of independent operators in the state, from low-volume single locations to multi-brand ghost kitchens.
- Average ticket per tier reflects the typical price-point progression — low-volume operators tend to skew quick-service / lower ticket; higher-volume operators trend toward fast-casual / mid-ticket; multi-brand ghost kitchens often include catering uplift.
- Marketplace mix (% of orders through DoorDash + Uber Eats + Grubhub vs. walk-in / phone / direct) modeled from publicly reported third-party order share for Florida independents. Higher-volume operators trend toward higher marketplace mix because the apps are their primary discovery channel at scale.
- Commission rate uses the realistic effective rate after platform tier selection (most operators land on the Plus / Premier marketing tiers + delivery fees), based on each platform's public merchant pricing as of Q4 2026. See the marketplace-rate table above for source rates.
- Annual loss = monthly orders × marketplace % × average ticket × 12 months × commission rate.
- Recoverable assumes 75% of marketplace volume shifts to direct ordering within 6-12 months (QR codes on every bag + receipts, repeat-customer incentives, customer-list growth). Shifted volume goes from ~30% commission to ~3% Stripe processing — a 27-point swing. Recoverable = shifted volume × 27%.
- Not included in the loss figure: the second-order effects (customer-data opportunity cost, the inability to retarget marketplace diners, the cost of paying the marketplace twice to deliver the same regular). These are real but harder to model. The figure above is the floor.
